Rye flour and molasses give pumpernickel bread its rich colour and flavour.
This coarse, dark bread with a slightly sour taste is a favourite in Eastern Europe. It usually contains a higher proportion of rye flour to wheat flour, as well as molasses, which adds both colour and flavour.
Pumpernickel is available in rolls and loaves of various shapes and sizes, including appetiser-sized slices.
Spread regular or appetiser-sized slices of pumpernickel with low-fat cream cheese, layer with smoked salmon and thinly sliced tomato, and top with capers.
